05 - Gradually pour the warm hojicha-infused dairy mixture into the egg yolks while whisking constantly. This tempering process prevents the eggs from curdling.
06 - Return the mixture to the saucepan. Cook over low heat, stirring constantly with a wooden spoon, until the custard thickens and coats the back of the spoon, approximately 6-8 minutes. Do not allow the mixture to boil.
