# Expert Tips:

01 -
  • The earthy sweetness of roasted beets and the bright tartness of blood oranges create a balance that feels both indulgent and light.
  • It looks stunning on the table without any fuss, like you spent hours when you really didn't.
  • You can prep the beets ahead and toss the salad together in minutes when people arrive.
02 -
  • Don't skip wrapping the beets in foil, it traps the steam and makes them incredibly tender while keeping your oven clean.
  • Peel the beets while they're still warm, the skins will slip off with barely any effort and save you a lot of scrubbing.
  • Dress the salad at the last possible moment or the greens will wilt and the whole thing loses its brightness.
03 -
  • Wear gloves or rub your hands with a little oil before peeling beets to avoid staining your fingers.
  • Slice the blood oranges just before assembling so they don't dry out or lose their juice.
  • Taste your dressing before adding it to the salad, the sweetness of the oranges and honey can vary so adjust the vinegar or mustard as needed.
