Homemade Strawberry Gummies (Printable Version)

# What You Need:

→ Fruit Base

01 - 1 ½ cups fresh strawberries, hulled and halved
02 - 2–3 tablespoons honey or maple syrup
03 - 2 tablespoons freshly squeezed lemon juice

→ Gelatin Mixture

04 - 3 tablespoons unflavored gelatin powder
05 - ½ cup cold water

# How to Make It:

01 - Combine strawberries and lemon juice in a blender or food processor. Blend until completely smooth, ensuring no fruit chunks remain.
02 - Transfer the pureed mixture to a small saucepan. Add honey or maple syrup and stir thoroughly to incorporate the sweetener evenly.
03 - Sprinkle gelatin powder over cold water in a separate small bowl. Let stand for 3–5 minutes until the gelatin absorbs the liquid and thickens considerably.
04 - Heat the strawberry puree over medium-low heat for 2–3 minutes. Monitor carefully to warm through without bringing to a boil, which could affect gelatin's setting properties.
05 - Add the bloomed gelatin to the warmed fruit mixture while whisking continuously. Continue whisking for approximately 2 minutes until the gelatin dissolves completely and the texture becomes uniform.
06 - Remove from heat immediately. Carefully pour the mixture into silicone gummy molds or a parchment-lined small baking dish, working quickly before the gelatin begins to set.
07 - Place the filled molds or dish in the refrigerator. Chill for at least 2 hours or until the gummies are completely firm and set throughout.
08 - Pop gummies out of silicone molds or cut into bite-sized pieces if using a baking dish. Transfer to an airtight container and refrigerate for up to one week.
