Caramel Crunch Oyster Crackers (Printable Version)

Crispy crackers coated in buttery caramel for an addictive sweet and salty snack.

# What You Need:

→ Crackers

01 - 6 cups oyster crackers (about 2 standard bags)

→ Caramel Glaze

02 - 1 cup unsalted butter (2 sticks)
03 - 1 cup packed light brown sugar
04 - 1/3 cup light corn syrup
05 - 1/2 teaspoon kosher salt
06 - 1/4 teaspoon baking soda
07 - 1 teaspoon pure vanilla extract

# How to Make It:

01 - Preheat oven to 250°F. Line a large rimmed baking sheet with parchment paper or a silicone baking mat.
02 - Spread oyster crackers evenly over the prepared baking sheet.
03 - In a medium saucepan over medium heat, melt butter. Add brown sugar, corn syrup, and salt. Stir constantly until mixture comes to a gentle boil; let boil for 2 minutes without stirring.
04 - Remove from heat. Immediately stir in baking soda and vanilla extract. The mixture will foam slightly.
05 - Pour the hot caramel mixture over the crackers. Use a spatula to gently toss and coat the crackers evenly.
06 - Bake for 30 minutes, stirring every 10 minutes to ensure even coating.
07 - Remove from oven and allow to cool completely on the baking sheet. The crackers will crisp as they cool. Break apart any clusters and store in an airtight container.

# Expert Tips:

01 -
  • The texture transforms from regular crackers into something impossibly crispy and light
  • They disappear faster than you can explain what they are
02 -
  • The baking soda step might seem unnecessary but it's what creates those tiny bubbles that make the coating light and crunchy instead of hard and glassy
  • If you stir during the 2 minute boil, the caramel might seize up, so trust the process and walk away
03 -
  • Use a silicone mat if you have one, the caramel peels off so much easier than from parchment
  • Let your caramel cool for about 30 seconds before pouring it gives you more control over the coating
